Presently I am gathering information on specifications and consultation for Wheat Flour sellers for Asian Noodle application. I am only interested in Hard White Wheat (e. G. Blanca Grande or Alturas) , with below specs, and millers or vendors (ONLY IN USA) that specialize in Asian noodle or have ongoing business with a manufacturer.
The general specs are:
1) Moisture-14% Max
2) Protein-8. 2% Max
3) Ash-0. 42% Max
4) Water Absorption-~60
5) Stability-~9
6) Viscosity-600 BU Max
